Soak the gelatin in 1/2 cup of cold chicken broth for 5 minutes
Beat the egg yolks and mix with the remaining broth, season to taste, and cook over low heat until the mixture thickens well
Add the softened gelatin and mix well to dissolve
Pour the mixture over the prosciutto
Mix well
Refrigerate, stirring occasionally, until it starts to firm up
Add the beaten whipped cream (or canned, without the whey) and mayonnaise
Place in a rectangular mold soaked with cold water and refrigerate until firm
To serve; unmold and garnish to taste.
