1 turkey, about 6 kg
Sauce
1/2 cup fresh lime juice
1 cup olive oil
2 cherry jam jars
2 cups water
2 shallots, finely chopped
2 pimentos, seeded and finely chopped
2 stalks celery, finely chopped
4 bay leaves
1/3 cup chopped parsley
5 green onions, finely chopped
2 tablespoons dried marjoram, finely chopped
Filling
1/2 kg cooked and mashed chestnuts
1/2 kg chestnut halves
200g butter
turkey liver, finely chopped, sautéed in 2 medium onions, 5 tomatoes (without seeds), and 1 small garlic clove
250g candied plums, chopped
150g green olives, pitted
200g raisins, without pit
6 hard-boiled eggs, chopped
3 tablespoons chopped parsley
4 tablespoons chopped green onions
200g butter

Mix all the sauce ingredients and let the turkey rest in that marinade for one day
For the filling, melt 200g of butter over low heat
Add the chopped onions and sauté until golden brown
Add the mashed chestnuts, cut chestnut halves, candied plums, and chopped raisins
Stir well
Simmer for a few minutes, stirring constantly
Gradually add the cornmeal until the mixture is smooth and creamy
Add the cooked turkey liver mixture, chopped eggs, green olives, salt, and marjoram
Mix well
Stuff the turkey with this mixture
Wrap in foil and bake in a medium oven
Remove the foil, brush with butter, and let it golden brown
Serve on a large platter with mashed potatoes, plum compote, and various fruit preserves
And that's it! With plenty of champagne and white wine on ice.
