400g pork loin, ground

2 tablespoons vinegar
1/2 cup chopped onion (75g)
1 teaspoon fresh thyme, chopped

5 slices of bread, crumbled (100g)

6 pineapple rings in syrup (350g), drained (reserve the syrup for the sauce)
For the sauce
3/4 cup water (180ml)
1/4 cup pineapple syrup (60ml)
1/3 cup sugar (60g)
1/3 cup vinegar (80ml)
1 teaspoon soy sauce (shoyu)
1 teaspoon cornstarch
1 teaspoon tomato extract
Green onion, for garnish

In a medium bowl, mix together the pork loin, salt, and vinegar. Reserve
In a medium skillet, over medium heat, sauté the onion and thyme in olive oil, stirring occasionally, until the onion is softened (about 2 minutes)
Add the reserved pork mixture and cook, stirring constantly, until it loses its pink color (about 3 minutes)
Transfer to the bowl
Mix in the bread crumbs well with your hands until a homogeneous mixture forms
Divide into six portions
Grease a surface lightly with butter
Using an 8cm cookie cutter or shaping by hand, form each portion into a patty
Reserve on the greased surface
Heat a large skillet or griddle over high heat
Butter it and reduce the heat to medium
Fry two patties at a time until they're golden brown (about 2 minutes per side)
Arrange them on a refractory tray and top each with a pineapple ring. Reserve
Heat the oven to 200°C (hot)
Prepare the sauce: in a medium saucepan, combine all ingredients and mix well
Cook over high heat, stirring constantly, until it thickens slightly (about 5 minutes)
Pour over the pineapple rings
Bake in the preheated oven for about 10 minutes
Garnish with green onion
Serve immediately
