Dissolve the biological yeast in a little water
In a bowl, combine the dissolved yeast, the rest of the water, and the salt
Add the flour and mix to form the dough
Knead for five minutes, divide into six parts, and open each one like a rectangle
Spread mozzarella and Italian sausage over each unit
Fold up the rectangles
Make two braids (each using three rectangles)
Grease and dust with flour two ring-shaped molds in the middle, and place a braid in each mold
Let rest for an hour
Bake in a preheated oven at 180°C for one hour
Serve hot or cold.
