Melt the chocolate with the butter and reserve
Next, beat the eggs with the almond meal until you get a fluffy mixture that doubles in volume
Add the flour at low speed and mix in the melted white chocolate
Beat the egg whites until stiff and fold them gently into the mixture from bottom to top
To finish, beat the sage leaves slowly into the milk until you get a concentrated green sauce
Add the concentrated sauce to the mixture and let it rest for 20 minutes
Place the batter in greased molds coated with butter and flour and bake at 180°C for 8 minutes.
