Cut the beef into thin strips
Mix 1 soup spoon of olive oil, soy sauce, cornstarch, and to taste in a bowl
Add the beef and stir well
Let it rest overnight in the refrigerator
Drain and reserve the liquid
Cook the beef in the remaining olive oil for 5 minutes, turning frequently with a fork
Add the pimento and scallion
Cook for 2 or 3 minutes
Add the tomato and mushrooms and cook for another 3 minutes
Pour the reserved liquid over the beef and cook, stirring until it thickens
