4 cups of prepared watermelon rind
4 cups of cold water
2 red bell peppers
2 green bell peppers
1 1/4 kg of green cabbage
3 onions
4 cups of vinegar
2 cups of black pepper
2 tablespoons of ground cinnamon
2 tablespoons of ground paprika
2 tablespoons of mustard powder
1 tablespoon of curry powder
2 tablespoons of mustard seeds

To prepare the watermelon rind, do the following: cut it well, removing all the pulp (including the green part)
Cut the watermelon rind into pieces and soak them in cold water with 3 tablespoons of salt and let them sit in the refrigerator for a day or two
Chop the onion, bell pepper, and cabbage into fine pieces
Add 1/3 cup of salt and let it sit in the refrigerator for a day or two
Drain the watermelon rind and rinse it again
Chop it finely
Add the chopped vegetables
Add the remaining ingredients and cook slowly for 45 minutes, stirring occasionally
Immediately place them into sterilized hot jars
