Heat the olive oil in a pan and sauté the onion until golden brown
Add the ground beef and cook until the liquid has evaporated
Season with salt, pepper, and parsley
Wash and peel the sweet potatoes
Slice into thin rounds and boil in salted water for 4 minutes
Drain
Crumble some of the cooked sweet potato to line a tart pan with removable bottom, greased with butter
Add the remaining sweet potato slices to the sides and bottom of the pan
Reserve some for topping
Mix the eggs lightly and combine with the ground beef, Parmesan cheese, and olives
Fill the tart crust
Cover with the reserved sweet potato slices, spread with butter, and bake in a preheated oven at 200°C for 50 minutes or until golden brown
Let it cool slightly before serving.
