Preparation
Peel the sweet potato and cut it into fine slices
Soak in boiling water for three minutes
Drain and reserve
Fry the sweet potato and onion in butter until golden brown
When cooked, drain excess fat, reserving the mixture in a bowl
Set aside
Combine bell pepper, eggs, and salt
Mix well and divide into four parts
Heat the skillet with olive oil and add the tortilla
Fry one side until golden, then flip and fry the other side
Serve immediately.
