One large tender mignon steak (900g), trimmed of excess fat
4 cloves of garlic, mashed
1 tablespoon of black pepper to taste
3 tablespoons of mustard
2 tablespoons of olive oil
2 tablespoons of butter
2 ripe bananas, cut into lengthwise slices
15 stalks of green onion (only the green part), chopped
250g of bacon, sliced
Refried turtle beans to serve with

On a cutting board, cut the tender mignon in half lengthwise without separating the two parts, and then open it like a blanket
Season with garlic, salt, and pepper
Spread mustard on top of the meat. Reserve
In a skillet, heat the olive oil and butter and fry the banana slices for 2 minutes per side or until golden brown
Lay the banana slices over the meat and top with green onion
Fold the blanket in half, close the edges with toothpicks, and tie them with a piece of twine to prevent it from coming undone during cooking
Wrap the entire tender mignon with bacon slices in the same direction as the fold
Bake in a preheated oven at 250°C (high heat) for 45 minutes or until the bacon is well browned, in a greased skillet
Cut the rehashed meat into slices and serve with the skillet sauce and refried turtle beans
