4 kg of green tomatoes, cut into fine slices
4 onions, cut into fine slices
1/2 cup of salt
2 tablespoons of black pepper
2 tablespoons of white wine vinegar
1/2 teaspoon of ground Jamaican pepper
4 tablespoons of mustard in the rough
1 tablespoon of curry powder (optional)

Combine the tomatoes with the onions, sprinkle with salt and let it rest for 4 hours
Strain well
Mix all remaining ingredients in a saucepan, bring to a boil and let it simmer
Add the vegetables and let it simmer again
Reduce the heat and cook over low heat for 5 minutes
Transfer to warm, sterilized jars and seal immediately
Cook in a water bath for 15 minutes
Ready to use: 4 liters
