2 cups (scant) of cooked rice
1/2 cup (scant) of fresh green beans, blanched
1/2 cup (scant) of grated Parmesan cheese
1/4 cup (scant) of chopped fresh parsley
Salt and black pepper to taste
6 small bell peppers
1 cup (scant) of tomato sauce
2 cups (scant) of shredded mozzarella
2 cups (scant) of cooked rice
1/2 cup (scant) of fresh green beans, blanched
1/2 cup (scant) of grated Parmesan cheese
1/4 cup (scant) of chopped fresh parsley

6 small bell peppers
1 cup (scant) of tomato sauce
2 cups (scant) of shredded mozzarella
1 Preheat the oven to 400°F
In a bowl, mix together the rice, green beans, Parmesan cheese, parsley, salt, and black pepper
2 Cut off the tops of the bell peppers and remove the seeds
Fill the bell peppers with the rice mixture, spread tomato sauce on top, and cover with mozzarella cheese
Bake in the oven for 30 minutes and serve immediately.
