3 kg of pintado
1 cup white dry wine
1/2 cup vinegar
1 1/2 cups olive oil
1 teaspoon dried oregano
to taste salt
juice from 3 limes
Lemon Sauce: juice from two limes
1 cup water
chopped onion
1 tablespoon chopped fresh parsley
salt and pepper to taste
1/2 cup olive oil
1 teaspoon grated ginger
3 kg of pintado

Clean the pintado, removing the skin, and cut into cubes about 5 cm square
In a bowl, mix together wine, vinegar, olive oil, oregano, salt, and lime juice
Place the pintado cubes in this marinade and let it sit for several hours (it can stay in the refrigerator overnight)
Thread the pintado cubes onto skewers and grill over the flames
You can serve with lemon sauce or another of your preference
Lemon Sauce: Mix all ingredients together and serve in a bowl.
