800 g of beef (rump or chuck), ground
2 cloves of garlic, minced
2 tablespoons of lemon zest

300 g of mozzarella cheese, sliced

For the sauce
5 large tomatoes (850 g), ripe, diced
1 small onion (70 g), finely chopped

In a medium bowl, tear the bread into the water
Add the beef, garlic, lemon zest, and salt
Mix well
Divide the mixture into four parts and one part in two
Take one of the parts with your hands
Place 1/4 of the mozzarella slices on top of it
Cover with the other part of the beef mixture, and with your hands, press well to join the edges and form a round meatball
Do the same with the three remaining parts
In a medium skillet, heat the olive oil over low heat
Add two meatballs and lightly brown one side
Flip them with a spatula and lightly brown the other side (approximately 6 minutes per side)
Drain on paper towels
Repeat the process with the remaining meatballs. Reserve
Prepare the sauce: in a medium skillet, combine all the ingredients except for water, mix, cover and simmer over high heat
Reduce heat to medium and cook, stirring occasionally, until the tomato breaks down (approximately 20 minutes)
Add the water and cook until the sauce thickens (approximately 10 minutes)
Blend in a blender and pass through a sieve
Return to the skillet and reheat over high heat
Distribute the meatballs among four plates, cover with the sauce, and serve immediately
