For the tomato sauce
5 large tomatoes (850 g), well-ripened, cut into pieces
1 small onion (70 g), finely chopped

1/2 xicara of water (120 ml)

In a medium bowl, shred the pork in water
Combine the beef, garlic, lemon zest, and salt
Mix well
Divide the mixture into four parts, then each part into two more parts
Take one part with your hands
Place 1/4 of the mozzarella slices on top
Cover with another part of the meat mixture, and use your hands to shape it into a ball
Do the same with the remaining three parts
In a medium pan, heat the olive oil over low heat
Add two meatballs and lightly brown one side
Flip them with a spatula and brown the other side (approximately 6 minutes per side)
Let them drain on paper towels
Repeat the process with the remaining meatballs. Reserve
Prepare the tomato sauce: In a medium pan, combine all the ingredients except water
Mix, cover, and let it simmer over high heat
Reduce the heat to medium-low and cook, stirring occasionally, until the tomatoes break down (about 20 minutes)
Add water and cook until the sauce thickens (about 10 minutes)
Blend in a blender and strain through a sieve
Heat again over high heat
Distribute the meatballs among four plates, cover with the tomato sauce, and serve immediately
