1 kg of clean rabbit, 1/4 cup of finely chopped green scallion, 2 cloves of garlic, minced, 1 medium onion (100 g), minced, 1/4 cup of lime juice (60 ml), 1/2 cup of olive oil (120 ml), 1/2 cup of water (120 ml), 2 medium tomatoes (240 g), seeded and chopped, 1 teaspoon of salt or to taste

Place the clean rabbit in a pressure cooker, cover with water, seal and bring to high heat until it starts to boil (when the pressure cooker starts to whistle)
Avoid the heat and cook for 5 minutes
Turn off the heat, wait for all the pressure to release and then open
Drain, let cool and cut into small pieces
In a bowl, mix the remaining ingredients
Add the rabbit, cover, and refrigerate until serving time
