In a pan, melt 1/2 tablespoon of butter
Add the onion and fry until golden brown. Reserve
Place the still-warm mashed potatoes in a bowl
Add the anchovies and fish and mix well
Let it cool slightly
Add the egg yolk and beat well
Add the chopped onion, parsley, and flour and mix
Refrigerate for 1 hour
Divide the mixture into five parts and shape the burgers
In a large skillet, heat half of the remaining butter and olive oil
Dip the burgers in the cornstarch, remove excess, and fry quickly on both sides to brown
Add the remaining butter and olive oil slowly
Assemble the sandwiches and serve
