In a large pot, place the chicken drumsticks clean and cover with cold water
Season with salt and bring to a simmer
Let it cook for about two hours or until tender
Drain and cut into small pieces
Meanwhile, caramelize the onion and garlic in olive oil
Add the vinegar and let it simmer for two minutes
Add the oregano, hot pepper flakes, parsley, and salt to taste
Combine this marinade with the chopped chicken drumsticks, mix well, and let it cool before serving.
