1/4 cup of chopped parsley

2 tablespoons of lemon juice
3 cloves of minced garlic
2 large tomatoes, diced
1 small chicken (1 kg) cleaned
1 medium onion, diced
1 medium bell pepper, diced
1/2 teaspoon of mustard seeds
Salt to taste

In a pot, place the chicken, cover it with six cups of water, bring to a boil and let simmer for 15 minutes or until the chicken is tender
Drain and cut into 1 cm pieces. Reserve
In the same pot, sauté the onion, garlic, bell pepper, and tomato in three tablespoons of olive oil over high heat, stirring occasionally, for 5 minutes or until the tomato starts to break down
Add the chicken, parsley, green onion, ground coriander, salt, mustard seeds, and lemon juice
Mix well and let simmer for 1 minute
Season with remaining olive oil and mix again
Transfer the mixture to a plate
Serve hot or at room temperature with crackers.
