Peel and slice the mangoes, leaving out the center
Cover with sugar and place lime slices on top
Sprinkle with cinnamon and add 1 bottle of white wine
Let the mixture rest in a covered bowl for 10 hours
Only after this period, add the remaining wine and champagne.
