Season the pork chops with salt and black pepper
Dredge the pork chops in all-purpose flour
Melt the butter in a pan, then add the pork chops and parsley
Cook over low heat until browned on both sides
Add the lime juice and cook for an additional 3 minutes, covered
Stir in the heavy cream and bring to a simmer, but do not let boil
Serves 2
Note: this pork is flavorful and economical, but has very tough skin
It's usually found clean at fish markets and fairs
If it's not, ask the vendor to remove the skin for you.
