6 fish fillets

Sprinkle the fish fillets with salt and black pepper
Butter or margin a skillet or sauté pan and add the fish fillets
Season the fish with onion, garlic, parsley, and oregano
Add the white wine and tomatoes
Bring to a simmer and cook for 15-20 minutes or until the fish is cooked through
Transfer the fish to a warmed serving platter and continue cooking the sauce over high heat until it has reduced by half
Add 1 tablespoon of butter or margarine
Pour the sauce over the fish and serve immediately.
