Oil (for greasing)
A medium-sized cod, around 1.2 kg, cleaned
One tablespoon of mashed garlic
Two teaspoons of chopped parsley
One teaspoon of grated ginger
Two teaspoons of lemon juice
One tablespoon of salt or to taste
Three large onions (450g), sliced into thin rings
Three teaspoons of olive oil

Preheat the oven to 250°C (very hot)
Grease a medium-sized baking dish with oil and reserve
Season the fish with garlic, parsley, ginger, lemon juice, and salt
Place it in the reserved baking dish, distributing the onions on top and drizzle with olive oil
Cover with aluminum foil and put it in the preheated oven until, when you poke a hole at one end of the fish with a fork, it easily falls apart (around 30 minutes)
During this time, baste with the liquid that forms in the baking dish no less than twice
Serve afterwards
