1 Heat the olive oil in a pan, sauté the onion and tomato
Add the fish, season with salt and pepper
Let it cook for 5 minutes over low heat and cover the pan
Remove from heat and let it cool
2 Use a fork to break up the fish
Mix in the wheat flour and stir until a paste forms
Shape into balls, coat with egg white and then croissant flour
In a frying pan, heat some oil and fry the fritters.
