For the dressing
1 egg
1 tablespoon chopped onion
1 tablespoon lemon juice
1 pinch salt
3/4 cup olive oil (180ml)
To garnish
1/4 cup pitted green olives, sliced (40g)
1/4 cup shaved Parmesan cheese (25g)

For the dressing
1 egg

Slice the meat into 0.5 cm thick strips, place them between two sheets of plastic wrap and beat with the flat side of a meat mallet until they're thin
Distribute among four individual plates and reserve
Prepare the dressing: wash the egg in running water and blend at low speed in a blender with the onion, lemon juice, and salt
Add the olive oil gradually until the mixture thickens
Spread the dressing in a thread over the meat with a spoon
Garnish with green olives and shaved Parmesan cheese and serve chilled
