1 cup of basic tomato sauce (recipe on the side page)
500g shredded mozzarella cheese, coarsely grated
80g pancetta slices
1/2 cup fresh ricotta cheese, without whey
Extra virgin olive oil for serving
Salt to taste

Spread the tomato sauce over the dough disc and cover with mozzarella cheese
Place pancetta slices on top and sprinkle with ricotta cheese
Drizzle with extra virgin olive oil and season with salt
Bake in a conventional oven at medium heat (180°C) for 25 minutes or in a wood-fired oven for four minutes, until the crust is crispy and the cheese is melted.
