Combine milk, egg, flour, olive oil, spinach puree, and salt in a blender and blend well
Grease a non-stick pan with a little bit of oil
Make three pancake disks and cook them on both sides equally
On a plate, arrange one disk, spread some cream cheese and distribute tomato slices, cucumber slices, grated carrot, prosciutto, and cheddar cheese layers
Carefully place the other disk on top and repeat the process with all ingredients
Finish with a pancake and cut the sandwich in half.
