Squeeze the lemon over the chicken to clean it well
Using a knife, cut it in half lengthwise along the backbone and place it on a baking sheet
Cut the butter into small pieces and place them on top
Distribute the bacon slices and sprinkle with salt, pepper, and lemon balm
Drizzle with olive oil
Bake for 50 minutes or until golden brown
Arrange on a platter decorated with fresh parsley leaves and serve.
