1 caipira chicken
3 tablespoons of olive oil
2 medium-sized onions, chopped
3 cloves of garlic, minced
Water
1 handful of parsley, chopped
Salt to taste

Separate the chicken into desired portions
Fry four pieces of chicken in a cast-iron skillet with some olive oil
Dredge them in breadcrumbs and remove from the pan, then add another four pieces
Repeat the process until everything is fried
In the remaining fat, caramelize the onions and garlic
Return the meat to the pan and add water as needed
Cover and let cook
If the chicken isn't young, add more water (no more than one cup at a time) and let it cook until tender
Add salt to taste
Just before serving, sprinkle chopped parsley on top
