Heat the olive oil and sauté the onions
Add the shredded chicken, mix well, and if needed, add a little more oil
Cook for 5 minutes
In a bowl, mix together the mashed potatoes, half of the grated cheese, chopped parsley, and beaten eggs until uniform
Add the cooked chicken and season with salt and pepper
Set aside
Mix the breadcrumbs with the remaining grated cheese and sprinkle over a greased mold
Pour in the pudding mixture and sprinkle again with breadcrumbs
Bake in a medium preheated oven until golden brown
Unmold and decorate with tomato sauce and parsley.
