Remove the tomato peel and seeds, chop it up, and blend with the onion and garlic in a blender
Season with salt and black pepper and cook until slightly thickened. Reserve
Heat some olive oil and pan-fry the tortillas to warm them up
Fry them also in the sauce
Reserve and keep warm
Fry the eggs, taking care not to break the yolk
Place each tortilla on a plate
Put an egg on top and cover with the sauce
Serve immediately.
