3 medium-sized onions, sliced
2 cups of white wine vinegar

11/2 pounds of cod fillets
8 cloves of garlic, peeled
2 sprigs of rosemary
1 malagueta pepper, seeded and chopped
1 sprig of oregano

Rinse the cod
Remove the skin and bones
Dry it well with paper towels and coat in wheat flour
Remove excess flour
In a frying pan, heat half a cup of olive oil and fry the fillets for 1 minute on each side
Drain on paper towels
Arrange in a refrigerator and reserve
Put the remaining olive oil in a pot, add onion and garlic with peel
Fry over low heat until they start to caramelize
Add white wine, vinegar, herbs, rosemary, and black pepper
Add 2 cups of filtered water and let it simmer until the liquid is reduced by half
Season with salt
Add malagueta pepper and mix
Serve chilled, accompanied by a green salad.
