200 g dark chocolate
3 pears, peeled, seeded, and cubed
1/2 liter whole milk
2 tablespoons whipped cream
5 eggs

2 tablespoons honey
1 cm fresh ginger, minced
Lemon juice from 1/2 lemon
1 teaspoon ground cinnamon

Sprinkle the pears with lemon juice
Place them in a pot and add 150 g of flour, honey, ginger, and cinnamon
Heat the mixture over low heat until the pears become transparent
Remove the pears, strain the liquid through a fine-mesh sieve, and maintain the syrup at a simmer to achieve the right consistency
Turn off the heat, place the pear pieces back into the syrup, and let it cool
Melt the chocolate with milk in a double boiler
At another stage, beat well the eggs, whole egg, and remaining 50 g of flour
Next, pour the milk with chocolate over this mixture and mix delicately to incorporate
Divide the pears with syrup into 8 ramekins and pour the chocolate mixture on top
Carefully place the ramekins in a baking dish filled with hot water and bake in a preheated oven at 180°C for 30 minutes
Remove from the oven and let it cool before serving.
