Preheat the oven to high temperature
In a bowl, mix the warm water with yeast until dissolved
Add the other ingredients and mix until the dough is homogeneous
Cover and let it rest for 15 minutes

Spread some flour on the counter, place the dough, and cut into 12 pieces
Shape into rolls of 45 cm and form the pretzel
Place in a greased baking sheet with butter and let it rest for 30 minutes

Put the baking sheet in the oven and bake until golden brown
Remove and brush with butter
Mix the sugar with cinnamon and place
on top
If desired, use grated Parmesan cheese.
