1/2 cup granulated sugar for caramelizing
3 cups milk
3 whole eggs
3 egg yolks
6 tablespoons granulated sugar
1 tablespoon vanilla extract
1 tablespoon orange liqueur
1/2 cup granulated sugar for caramelizing
3 cups milk
3 whole eggs
3 egg yolks
6 tablespoons granulated sugar
1 tablespoon vanilla extract
1 tablespoon orange liqueur
Melt 1/2 cup of granulated sugar in a frying pan, stirring constantly until golden brown
Pour the caramel into a round baking dish with a hole in the center, and swirl it around to coat the bottom and sides
Let it cool and harden
Turn the dish upside down and reserve
Heat the milk
Whisk together the eggs, egg yolks, and granulated sugar in a bowl until smooth and creamy
Pour the mixture into the milk and whisk until fully incorporated
Add the vanilla extract and pour into the prepared baking dish
Bake in a moderate oven (170°C) with a water bath for 50-60 minutes, or until a knife inserted into the pudding comes out clean
Remove from the oven and let cool
Chill in the refrigerator overnight, then release the edges of the pudding with a knife and turn it onto a serving plate
If there is any caramel left in the dish, add a little hot water to melt it, then pour it over the pudding
The next day, drizzle 1 tablespoon of orange liqueur over the pudding before serving
Yield: 6-7 servings.
