1/2 cup (ch) of white dried plums, seedless
2 tablespoons of rum
1 tablespoon of lemon juice
1/2 teaspoon of grated lemon zest
1/4 cup of uncooked rice
2 cups of milk
a pinch of salt
2 tablespoons of butter
2 eggs
1/3 cup (ch) of sugar
2 tablespoons of ground nutmeg
1/2 cup (ch) of white dried plums, seedless
2 tablespoons of rum
1 tablespoon of lemon juice

1 Combine the dried plums, rum, lemon juice, and grated lemon zest
Let it sit for 30 minutes
Cook the rice with milk and salt in a saucepan for an hour, stirring occasionally
Remove from heat and add butter
2 Beat the egg yolks in a blender and mix them into the rice
As it cools, add the reserved dried plums and preheat the oven
3 Beat the egg whites, combine with sugar, ground nutmeg, and half of the sugar
Beat constantly, then mix into the rice
Pour into a 2-liter refrigerator dish
Dust with remaining nutmeg and bake in a water bath for 30 minutes.
