Put the butter and coffee in a pan, bring to a boil, then reduce heat and let simmer
Add all the flour at once and mix well until a ball forms that falls from the sides of the pan
Remove from heat and add eggs one by one, beating well after each addition
Let cool slightly before spooning into lightly greased baking dish, leaving 5 cm space between puffs
Bake in hot oven (200°C) for 15 minutes
Reduce oven temperature to moderate (170°C) and bake for an additional 20 minutes
Let cool completely
Make a cut on the side and fill with the following filling: mix sugar, milk, and flour
Add to coffee and cook over low heat, stirring for about 15 minutes
Beat egg whites
Add some of the pan mixture to egg whites and then add back to pan
Cook over low heat, stirring for an additional 5 minutes
Let cool completely
