juice of 1 lemon

Melt the honey and combine with the cooked rice, raisins, evaporated milk, butter, and cinnamon
Place in a refractory dish and bake in moderate oven for 20 minutes, or until the pudding is golden brown
Add the lemon juice, stir gently, and bake for an additional 15 minutes
Serve warm, divided into 4 portions.
