3/4 cup (chay) of milk
1 egg white
1 small orange rind piece
1 tablespoon of sugar
2 tablespoons of wheat flour
2 tablespoons of cocoa powder
3 snow-white egg whites
In a small saucepan, combine the milk, egg white, orange rind piece, sugar, and wheat flour. Over low heat, stir well until it becomes smooth and forms a mass. Remove the orange rind and add the cocoa powder. Remove from heat and gently fold in the snow-white egg whites. Spoon into buttered soufflé dishes and refrigerate for 30 minutes. Serve immediately.
