1 Preheat the oven to 350°F
Wrap each banana in plastic wrap and microwave for 3 minutes
Let cool
Pit the bananas and mash with a fork
Combine the butter, flour, and egg yolks
Add the rum and mix until smooth. Reserve
2 Beat the egg whites until stiff peaks form and add the yeast
Gently fold the whipped eggs into the banana mixture
Taste and adjust as needed
Grease a refrigerator-safe dish with butter and dust with flour
Bake in a water bath at 350°F until set
If desired, sprinkle with cinnamon when serving.
