1 tablet of yeast for bread
1/4 cup of warm water
1/4 cup of sugar
2 spoons (tablespoon) of salt
3/4 cup of hot milk
1 tablespoon of grated lime zest
1 egg
1/2 cup of all-purpose flour
1/4 cup of melted butter or margarine
3 to 3 1/4 cups of all-purpose flour
Filling:
2 cups of black plums in syrup, drained and chopped
1/4 cup of sugar
2 tablespoons (tablespoon) of lime juice
To Brush:

To Brush:

Soften the yeast in warm water. Reserve
Mix together sugar, salt, and hot milk
Knead well
Add lime zest and egg without beating
Add 1/2 cup of flour
Mix well
Add yeast and melted butter or margarine
Add remaining flour gradually, mixing well until a firm dough forms
Place on a floured surface and knead for about 5 minutes
Place in an oiled bowl and cover
Let rise in a protected place until doubled in volume (takes about 1 1/2 hours)
Mix filling ingredients
Divide the dough into two equal parts
Divide each part into three equal parts
Form balls
Open each part of dough on a floured surface to form a rectangle with dimensions 35x12cm
Spread 1/3 cup of filling in the middle of the rectangle, leaving edges free, and dampen ends and one side
Roll up like a roulade and seal well the ends and the wet side
Repeat with other two parts
Make three cakes by rolling up the dough and sealing well the ends
Brush with melted butter and sprinkle with sugar and cinnamon
Let rise in a protected place for 45 minutes
Bake in a preheated moderate oven (180°C) for about 25 to 30 minutes, or until golden brown and cooked
Make two cakes.
