Caramelize the pudding mold with sugar
Blend in a blender the banana, eggs, milk, sugar, cinnamon, cornstarch, salt, and lemon juice
Add the lemon zest and pour into the caramelized pudding mold
Place in a preheated oven at 180°C in a water bath for 40 minutes
Remove from the oven, let cool, and unmold
Accompaniment
In a saucepan combine sugar and bring to a boil over low heat, stirring constantly until golden brown
Add water and simmer until the point of syrup is reached
Then add banana slices and stir until they are fully covered with this syrup
Remove from heat, let cool, and serve with chilled pudding.
