Cook and peel the sweet potatoes
In a saucepan, dissolve the gelatin in cold milk and add sugar
Cook over low heat, stirring constantly, until the gelatin is fully dissolved and the mixture thickens
Let it cool slightly, then whisk in the egg yolks one at a time
Heat the mixture again over low heat, stirring constantly, until it thickens to your desired consistency
Allow it to cool, then pass the sweet potatoes through a fine-mesh sieve or blender
Add the rum or liquor and mix well
Combine the gelatin mixture with the purée and add 1 cup of heavy cream
Mix well
Pour into a decorative mold and refrigerate for at least 2 hours or until firm
Unmold onto a serving plate, and garnish with whipped heavy cream and crystallized fruits.
