Preheat the oven to moderate temperature (180°C)
In a medium bowl, add the sugar gradually to the egg yolks, whisking with a fork until the mixture thickens and becomes pale in color
Let it sit for 8 minutes
Add the milk, heavy cream, and vanilla, mixing well
Pour the mixture into 12 individual ramekins (capacity of 1/2 cup)
Place them in a baking dish and add enough hot water to reach halfway up the ramekins
Bake in a water bath for about 50 minutes or until firm
Remove from the oven and let it cool
Refrigerate, covered, for at least 2 days
Serve in 12 individual portions
Suggestion: If desired, add 4 tablespoons of cocoa powder or 1/4 cup of finely ground coffee to the mixture before baking.
