Lime Cream
5 Egg Yolks
1/2 cup Unsweetened Cocoa Powder
1 cup Whole Milk
Lime Leaves (2.5 g)
Pudding
350 grams Bittersweet Chocolate
1 cup Unsalted Butter (200g)
5 Large Egg Whites
5 tablespoons Granulated Sugar
5 Egg Yolks, Beaten

5 Egg Yolks
1/2 cup Unsweetened Cocoa Powder
1 cup Whole Milk
Lime Leaves (2.5 g)
Pudding
350 grams Bittersweet Chocolate

Beat the egg yolks and sugar until a creamy mixture forms
Heat the milk with lime leaves and simmer
Remove from heat and let cool
Add the beaten egg yolk to the warm milk mixture and whisk constantly until it thickens
Let it cool and reserve

Preheat the oven to 150°C (302°F)
Melt the chocolate and butter in a double boiler
Beat until smooth
Beat the egg whites until frothy, then add the sugar and beaten egg yolk and beat well
Add the chocolate mixture

Pour into individual molds and steam in a water bath for 35 minutes or until firm
Let it cool and refrigerate for two hours

Unmold the pudding, dust with granulated chocolate, and serve with lime cream.
