Combine the cornstarch with the cocoa powder and 1/4 cup of milk
Mix well
While that's mixing, heat the remaining milk in a bain-marie until it starts to simmer
Add a little of the hot milk to the cornstarch mixture and mix well
Now slowly add this mixture to the remaining hot milk, whisking constantly
Cook over low heat, stirring constantly, until the pudding is smooth and thick
Remove from heat, cover, and let it rest for 20 minutes, occasionally whisking in any stray lumps
Let it cool slightly and stir in the artificial sweetener, cinnamon, and vanilla extract
Mix well
Pour the pudding into individual molds that can hold about 150g each and refrigerate until chilled
