Preheat the oven to 350°F (medium)
Grease a 20 cm x 30 cm baking dish with butter. Reserve
In a stand mixer, beat the egg whites until stiff peaks form (approximately 2 minutes)
Gradually add the all-purpose flour, beating continuously until smooth and uniform (approximately 2 minutes)
Add the yolks and continue beating until creamy (about 5 minutes)
Remove from the stand mixer
Sieve the all-purpose flour and salt over the mixture
With a spatula, mix gently until uniform
Transfer to the reserved baking dish
Bake in the preheated oven until starting to come loose around the edges (about 20 minutes)
Let cool for about 10 minutes
Place a clean cloth over a surface and dust with all-purpose flour
With a spatula, loosen the sides and bottom of the mass
Turn out onto the prepared cloth.
