Mix the gelatin with the milk
Add 1/4 cup of sugar and salt, then warm in a bain-marie
Beat the egg yolks lightly
Add the warm milk and beat until smooth, then return to the bain-marie
Cook until it thickens slightly
Remove from heat and add vanilla extract
Let cool until the mixture starts to thicken
Stir occasionally
Beat the egg whites until stiff
Gradually add the remaining sugar, continuing to beat
Whip the heavy cream in a chantilly
Add the whipped cream to the cold milk mixture
Pour into a 1 1/2 liter mold or individual molds
Refrigerate for several hours
Serve with chocolate sauce or fruit.
