Mix the eggs and yolks quickly
Add a little sugar at a time, stirring constantly
Gradually add the milk, mixing well
Mix thoroughly
Pass through a fine-mesh sieve three times and reserve
Prepare the caramel sauce by heating the sugar and water over low heat until golden brown
Pour the caramel sauce into a 9-inch round cake pan with a hole in the center
Spread evenly with a spatula
Pour the reserved pudding mixture into the prepared pan
Bake in a moderate oven (350°F) for about 1 hour, or until a knife inserted comes out clean
Let cool before unmolding
