Remove the mango skins, cut them into four pieces, and remove the seeds by cutting a central grommet from each of the quartered parts
Heat these grommets and peels over low heat with a little water
When they're well cooked, strain the liquid through a clean cloth, squeezing it tightly to extract as much liquid as possible
Mix the resulting liquid with an equal amount of sugar
If desired, add a few drops of lemon juice or a tablespoon of rum for extra flavor
Heat the mixture over low heat until it reaches your desired consistency
When making mango cakes, use the leftover peels and pits to make this pudding, which can also be spread over the cake after baking.
